  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For Assembly
  • 8 small flour tortillas
  • 1 tbsp olive oil for brushing

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Heat a skillet over medium heat and cook the egg mixture, stirring occasionally, until scrambled and fully cooked.
  4. Remove from heat and stir in cheese, bell peppers, and onions.
  5. Divide the filling evenly among the tortillas, placing it along one edge. Roll tightly and place seam-side down on the baking sheet.
  6. Brush the taquitos lightly with olive oil.
  7. Bake for 15-20 minutes, or until golden and crispy.
  8. Serve warm with salsa or sour cream if desired.
