Ingrédients
  

For the Cod
  • 4 fillets cod about 6 oz each
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Crumb Topping
  • 1/2 cup breadcrumbs
  • 2 tbsp parsley chopped
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp butter melted
  • 1 clove garlic minced

Method
 

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. Place the cod fillets in the baking dish. Drizzle with olive oil and season with salt and pepper.
  3. In a bowl, mix the breadcrumbs, parsley, lemon zest, lemon juice, melted butter, and garlic.
  4. Spoon the crumb mixture evenly over the cod fillets.
  5. Bake for 12-15 minutes, or until the fish flakes easily with a fork and the topping is golden.
