- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Pat pork chops dry with paper towels. Rub with olive oil, salt, and pepper.
- In a small bowl, mix honey, mustard, vinegar, and garlic powder.
- Place pork chops in the baking dish. Spoon half the glaze over them.
- Bake for 10 minutes. Flip chops, spoon remaining glaze, and bake for another 10 minutes or until internal temperature reaches 145°F.
- Let rest for 5 minutes before serving.
