Method
- Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until browned on both sides.
- Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Pour in chicken broth and add dried thyme. Bring to a boil, then reduce heat and simmer for 20 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred it. Return shredded chicken to the pot.
- Add egg noodles and cook according to package directions.
- Season with salt and pepper to taste. Stir in fresh parsley before serving.
Notes
You can substitute chicken thighs for chicken breasts if desired.
