  • 1 lb Boneless, skinless chicken breasts Cut into 1-inch pieces
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Vegetables
  • 1 medium Broccoli florets
  • 1 medium Bell pepper Sliced
  • 1/2 cup Red onion Sliced

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, toss the chicken pieces with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned chicken in a single layer on one side of the prepared baking sheet.
  4. In the same mixing bowl (no need to wash), toss the broccoli florets, bell pepper, and red onion with a drizzle of olive oil, salt, and pepper.
  5. Spread the vegetables in a single layer on the other side of the baking sheet.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized. Stir halfway through baking.
  7. Serve immediately.
