Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, toss the chicken pieces with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the seasoned chicken in a single layer on one side of the prepared baking sheet.
- In the same mixing bowl (no need to wash), toss the broccoli florets, bell pepper, and red onion with a drizzle of olive oil, salt, and pepper.
- Spread the vegetables in a single layer on the other side of the baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized. Stir halfway through baking.
- Serve immediately.
