For the Black Eyed Peas
  • 1 lb dried black eyed peas rinsed and sorted
  • 6 cups water or vegetable broth
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika

Method
 

  1. Rinse and sort the black eyed peas, removing any debris.
  2. Add the black eyed peas, water or broth, onion, garlic, salt, pepper, smoked paprika, and bay leaf to the crock pot.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6 hours, or until the peas are tender.
  5. Remove the bay leaf before serving.
