Method
- Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- In a separate bowl, beat the cream cheese until smooth. Add the melted white chocolate and vanilla extract, mixing well.
- Gradually add the powdered sugar, mixing until the dough is firm enough to roll into balls.
- Roll the dough into 24 small balls and place them on a parchment-lined baking sheet. Chill for 30 minutes.
- Dip the tip of a toothpick in red food coloring and draw veins on each truffle to resemble bloodshot eyes.
- Press a blue M&M into the center of each truffle to complete the eyeball look.
