For the Filling
  • 4 cups fresh blueberries or frozen, thawed
  • 1/4 cup granulated sugar adjust to taste
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
For the Crumble Topping
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 3/4 cup cold unsalted butter cut into cubes

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the blueberries, granulated sugar, cornstarch, and lemon juice. Toss gently to coat the blueberries. Pour the mixture into the prepared baking dish.
  3. In a separate medium bowl, combine the flour, rolled oats, brown sugar, and cinnamon. Add the cold butter cubes.
  4. Use a pastry blender, your fingers, or a fork to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Sprinkle the crumble topping evenly over the blueberry mixture in the baking dish.
  6. Bake for 30-35 minutes, or until the topping is golden brown and the blueberry filling is bubbly.
  7. Let the crumble cool for at least 10 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream or whipped cream.

Notes

You can add a pinch of salt to the crumble topping to enhance the flavors. If using frozen blueberries, do not thaw them completely; a slight chill is fine.
