Method
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until no longer pink, about 6-8 minutes.
- Pour buffalo sauce over the cooked chicken and stir to coat evenly.
- Remove from heat and let cool slightly.
- Place a spoonful of buffalo chicken onto each lettuce leaf.
- Top with blue cheese crumbles, diced celery, and a drizzle of ranch dressing.
- Serve immediately.
