Ingrédients
  

For the Chicken
  • 1 lb boneless, skinless chicken breast cut into strips
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
For the Bowl
  • 2 cups cauliflower rice
  • 1 cup black beans rinsed and drained
  • 1 cup corn
  • 1 avocado sliced
  • 1/4 cup cilantro chopped
  • 1/4 cup salsa
  • 2 tbsp lime juice

  • Large skillet
  • Mixing bowl

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add chicken strips and cook for 5-6 minutes until browned.
  2. Add chili powder, cumin, garlic powder, and salt to the chicken. Stir well and cook for another 3-4 minutes until chicken is fully cooked. Remove from heat.
  3. In the same skillet, add cauliflower rice and cook for 3-4 minutes until tender.
  4. Divide cauliflower rice between two bowls. Top with cooked chicken, black beans, corn, avocado, and cilantro.
  5. Drizzle with salsa and lime juice before serving.
