Method
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Place the quartered potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
- Drain the potatoes well. Return them to the pot. Add the melted butter, warmed milk, salt, pepper, and minced garlic. Mash the potatoes until smooth.
- Stir in 1.5 cups of the shredded cheddar cheese until well combined.
- Spread the mashed potato mixture evenly into the prepared baking dish.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- Bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Garnish with fresh parsley, if desired, before serving.
Notes
For an extra garlic flavor, you can roast the garlic cloves before mincing and adding them to the potatoes. You can also add a pinch of nutmeg for a subtle spice.
