Ingrédients
  

For the Chicken and Rice
  • 2 tbsp olive oil
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until browned, about 5 minutes.
  3. Add onion and garlic, and cook until softened, about 3 minutes.
  4. Stir in rice, chicken broth, salt, pepper, and paprika.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
  6. Remove from heat and let stand covered for 5 minutes before serving.
