For the Chicken
  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
For the Vegetables
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 onion sliced

Method
 

  1. Season the chicken breasts with salt and black pepper.
  2. Heat olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes per side until fully cooked.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the broccoli, bell pepper, and onion. Cook for 5-6 minutes until tender.
  4. Serve the chicken with the cooked vegetables.
