For the Soup
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 lb chicken breast, cubed
  • 6 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add chicken breast and cook until no longer pink, about 5 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low and simmer for 20 minutes.
  7. Season with salt, pepper, and thyme. Stir well.
  8. Serve hot.
