Ingrédients
  

For the Chicken
  • 4 bone-in, skin-on chicken thighs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
For the Sauce
  • 8 oz cremini mushrooms sliced
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper

  • Wooden spoon

Method
 

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and cook for 5-6 minutes until golden brown. Flip and cook for another 5 minutes. Remove chicken and set aside.
  3. In the same skillet, add mushrooms and cook for 4-5 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Pour in heavy cream, chicken broth, thyme, salt, and pepper. Stir well.
  6. Return chicken thighs to the skillet, skin-side up. Simmer for 10 minutes until sauce thickens and chicken is cooked through.
