Method
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook until golden brown, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the mushrooms and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Add thyme, salt, and pepper.
- Return the chicken thighs to the skillet, skin-side up. Simmer for 10 minutes until the sauce thickens and the chicken is cooked through.
