Method
- Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
- Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and chopped parsley. Cook for another minute until the sauce has thickened slightly.
- Return the chicken breasts to the skillet and spoon the sauce over them. Serve immediately.

You can serve this chicken with pasta, rice, or a side of steamed vegetables.
