Chicken with Lemon Butter Sauce

Ingrédients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
For the Lemon Butter Sauce
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice freshly squeezed
  • 2 tablespoons heavy cream
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant.
  4. Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  5. Stir in the heavy cream and chopped parsley. Cook for another minute until the sauce has thickened slightly.
  6. Return the chicken breasts to the skillet and spoon the sauce over them. Serve immediately.

Notes

You can serve this chicken with pasta, rice, or a side of steamed vegetables.
