Ingrédients
  

For the Base
  • 200 g digestive biscuits crushed
  • 100 g butter melted
For the Filling
  • 500 g cream cheese softened
  • 150 g caster sugar
  • 200 g dark chocolate melted
  • 3 eggs
  • 1 tsp vanilla extract

Equipment

  • 9-inch springform pan
  • Mixing bowls
  • Electric mixer

Method
 

  1. Preheat the oven to 160°C (140°C fan). Grease a 9-inch springform pan.
  2. Mix crushed biscuits with melted butter. Press into the base of the pan.
  3. Beat cream cheese and sugar until smooth. Add melted chocolate and mix.
  4. Add eggs one at a time, then vanilla extract. Pour over the biscuit base.
  5. Bake for 60 minutes until set but slightly wobbly in the center. Cool in the oven with the door ajar.
  6. Chill in the fridge for at least 4 hours before serving.

Notes

For a lighter version, use milk chocolate instead of dark chocolate.
