Method
- In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
- Stir in the pumpkin puree and melted butter. Add the salt.
- Gradually add the flour, mixing until a soft dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 30 minutes, or until doubled in size.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Punch down the dough and divide it into 12 equal pieces. Roll each piece into a rope about 10-12 inches long. Twist into pretzel shapes.
- Place the pretzels on the prepared baking sheet.
- In a small saucepan, melt the butter. Stir in the sugar and cinnamon.
- Brush the tops of the pretzels generously with the cinnamon-sugar mixture.
- Bake for 12-15 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
For a chewier pretzel, you can boil them in a baking soda solution for 30 seconds before baking.
