Ingrédients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
For the Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs room temperature
  • 0.5 cup sour cream

Method
 

  1. Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the pan.
  3. Bake the crust for 10 minutes, then let it cool slightly.
  4. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream until fully combined. Pour the filling over the crust.
  6. Bake for 50-60 minutes until the edges are set but the center is slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  8. Chill in the refrigerator for at least 4 hours before serving.
