For the Pasta
  • 8 oz elbow macaroni
For the Cheese Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Cook the macaroni according to package instructions. Drain and set aside.
  2. In a large pot, melt the butter over medium heat. Stir in the flour to form a roux.
  3. Gradually whisk in the milk until smooth. Cook until the sauce thickens.
  4. Remove from heat and stir in the shredded cheese until melted. Season with salt and pepper.
  5. Add the cooked macaroni to the cheese sauce and stir to combine.
  6. Serve immediately or transfer to a baking dish and bake at 350°F for 10 minutes for a crispy top.
