  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
Wet Ingredients
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup water

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the pumpkin puree, oil, eggs, sugar, and water until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Transfer the batter to the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted comes out clean.
  6. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
