For the Salad
  • 2 lbs potatoes peeled and diced
  • 4 eggs hard-boiled and chopped
  • 1/2 cup celery diced
  • 1/4 cup red onion finely chopped
For the Dressing
  • 1/2 cup mayonnaise
  • 1 tbsp mustard
  • 1 tsp vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, combine the cooled potatoes, chopped eggs, celery, and red onion.
  3. In a small bowl, mix the mayonnaise, mustard, vinegar, salt, and pepper to make the dressing.
  4. Pour the dressing over the potato mixture and gently stir to coat evenly.
  5. Chill the salad in the refrigerator for at least 1 hour before serving.
