Ingrédients
  

For the Chicken
  • 1 whole chicken (about 4-5 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
For the Stuffing
  • 1 lemon halved
  • 4 cloves garlic peeled
  • 1 small onion quartered

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels. Rub the chicken with olive oil, then season with salt, pepper, and thyme.
  3. Stuff the chicken cavity with the lemon halves, garlic cloves, and onion quarters.
  4. Place the chicken in a roasting pan and roast for about 90 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 10 minutes before carving and serving.
