Method
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
- While the pasta cooks, heat a skillet over medium heat. Add the pancetta and cook until crispy.
- In a mixing bowl, whisk the eggs, grated cheese, black pepper, and a pinch of salt.
- Drain the pasta, reserving a cup of the cooking water. Quickly mix the hot pasta with the pancetta.
- Remove the skillet from heat. Pour the egg mixture over the pasta, stirring quickly to create a creamy sauce. Add a splash of reserved pasta water if needed.
- Serve immediately with extra grated cheese and black pepper.
