Method
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions.
- While the pasta cooks, heat a skillet over medium heat and cook the pancetta until crispy.
- In a mixing bowl, whisk the eggs and mix in the grated Parmesan and black pepper.
- Drain the pasta, reserving 1/2 cup of the cooking water.
- Add the hot pasta to the skillet with the pancetta, then quickly stir in the egg mixture. Toss to coat, adding reserved pasta water as needed to create a creamy sauce.
- Serve immediately with extra Parmesan and black pepper if desired.
