Method
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until soft, about 5 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add canned tomatoes, vegetable broth, sugar, salt, and black pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Blend the soup until smooth using a blender.
- Stir in heavy cream if using and heat through.
