Ingrédients
  

For the Soup
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 28 oz canned tomatoes
  • 2 cups vegetable broth
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup heavy cream optional

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add canned tomatoes, vegetable broth, sugar, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend the soup until smooth using a blender.
  7. Stir in heavy cream if using and heat through.
