Cracker Barrel Meatloaf

Ingrédients
  

For the Meatloaf
  • 2 lbs ground beef 80/20 recommended
  • 1 cup breadcrumbs plain
  • 1 cup milk
  • 2 eggs
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Glaze
  • 1/2 cup ketchup
  • 1/4 cup brown sugar packed
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard

  • Loaf pan

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, chopped onion, minced garlic, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Shape the mixture into a loaf and place it in a loaf pan.
  4. In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard for the glaze.
  5. Spread half of the glaze evenly over the top of the meatloaf.
  6. Bake for 45 minutes.
  7. Remove the meatloaf from the oven, spread the remaining glaze over the top, and bake for another 15 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

You can add other vegetables like chopped bell peppers or celery to the meatloaf mixture for extra flavor and texture.
