For the Chicken
  • 1 lb boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Curry Sauce
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 can coconut milk 13.5 oz
  • 1 tbsp tomato paste
  • 1 tbsp fresh cilantro chopped

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, salt, and pepper. Cook until browned, about 5 minutes.
  3. Add curry powder, cumin, coriander, and turmeric. Stir to coat the chicken.
  4. Pour in coconut milk and tomato paste. Stir well to combine.
  5. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  6. Garnish with fresh cilantro before serving.
