Creamy Garlic Parmesan Chicken Pasta

Ingrédients
  

For the Chicken
  • 2 chicken breasts boneless, skinless, sliced into strips
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Pasta
  • 8 oz penne pasta
For the Sauce
  • 2 tbsp butter
  • 4 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp red pepper flakes optional

Method
 

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken strips, salt, and pepper. Cook until golden and no longer pink, about 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and whisk until smooth. Bring to a simmer and cook for 2-3 minutes.
  5. Stir in parmesan cheese and red pepper flakes (if using) until the sauce thickens slightly.
  6. Return the cooked chicken and pasta to the skillet. Toss to coat everything evenly in the sauce.
  7. Serve immediately, garnished with extra parmesan if desired.

Notes

For a lighter version, substitute half-and-half for the heavy cream. You can also add spinach or sun-dried tomatoes for extra flavor.
