Method
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut the fish fillets into strips about 1-inch wide.
- Place the flour in a shallow bowl. In another bowl, beat the eggs. In a third bowl, mix the panko breadcrumbs, garlic powder, paprika, salt, and pepper.
- Dredge each fish strip in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
- Place the coated fish sticks on the prepared baking sheet. Drizzle with olive oil.
- Bake for 12-15 minutes, flipping halfway through, until golden and crispy.
- Serve with your favorite dipping sauce.

For extra crispiness, broil the fish sticks for the last 1-2 minutes. You can also use whole wheat breadcrumbs for added fiber.
