For the Fish Sticks
  • 1 lb white fish fillets (such as cod or haddock) cut into strips
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Method
 

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut the fish fillets into strips about 1-inch wide.
  3. Place the flour in a shallow bowl. In another bowl, beat the eggs. In a third bowl, mix the panko breadcrumbs, garlic powder, paprika, salt, and pepper.
  4. Dredge each fish strip in the flour, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
  5. Place the coated fish sticks on the prepared baking sheet. Drizzle with olive oil.
  6. Bake for 12-15 minutes, flipping halfway through, until golden and crispy.
  7. Serve with your favorite dipping sauce.

Notes
