Crispy Parmesan Zucchini Fries

These zucchini fries are coated in Parmesan cheese and baked until crispy. They make a great appetizer or side dish.

Ingrédients
  

For the Zucchini Fries
  • 2 large zucchini trimmed and cut into 1/2-inch thick sticks
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For Serving (Optional)
  • 1/4 cup marinara sauce for dipping

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow bowl, place the flour. In another shallow bowl, whisk the eggs. In a third shallow bowl, combine the Parmesan cheese, panko breadcrumbs, garlic powder, salt, and pepper.
  3. Dip each zucchini stick first into the flour, shaking off any excess. Then dip it into the beaten eggs, letting any excess drip off. Finally, coat the zucchini stick thoroughly with the Parmesan-panko mixture.
  4. Place the coated zucchini sticks in a single layer on the prepared baking sheet.
  5. Bake for 18-20 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve immediately with marinara sauce for dipping, if desired.

Notes

For extra crispiness, you can lightly spray the zucchini fries with cooking spray before baking.
