Method
- Season the beef roast with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Place the seared roast in the crockpot. Add potatoes, carrots, and onion around the roast.
- Pour beef broth over the roast and vegetables.
- Cover and cook on low for 8 hours, or until the meat is tender and easily shreds.
- Remove the roast and vegetables from the crockpot. Let the roast rest for 5 minutes before slicing or shredding.
