Ingrédients
  

For the Chicken
  • 1 whole chicken (4-5 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
For the Stuffing
  • 1 lemon quartered
  • 4 garlic cloves
  • 1 small onion
  • 2 sprigs fresh rosemary

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels. Rub the chicken with olive oil.
  3. Mix salt, pepper, garlic powder, and thyme in a small bowl. Sprinkle the mixture evenly over the chicken.
  4. Stuff the chicken cavity with lemon quarters, garlic cloves, onion, and rosemary.
  5. Place the chicken in a roasting pan breast-side up. Roast for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving.
