For the Crust
  • 1.5 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 2 tbsp granulated sugar
For the Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs

Method
 

  1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture into the bottom of the pan.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing after each addition.
  4. Pour the filling over the crust. Bake for 45 minutes or until the center is set.
  5. Let the cheesecake cool, then refrigerate for at least 2 hours before serving.
