- Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- In a bowl, mix the shredded chicken with 1 cup of enchilada sauce.
- Layer half of the tortilla pieces in the baking dish. Top with half of the chicken mixture, black beans, onion, and cheese.
- Repeat the layers with remaining tortillas, chicken mixture, beans, onion, and cheese.
- Pour the remaining 1 cup of enchilada sauce over the top and sprinkle with extra cheese if desired.
- Bake for 25-30 minutes until bubbly and lightly browned. Garnish with cilantro before serving.

Notes
For extra flavor, add diced green chilies or jalapeños to the layers. Serve with sour cream or avocado.
