- Heat oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until no longer pink, about 5-6 minutes.
- Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.
- In a small bowl, whisk together soy sauce, honey, garlic, and ginger.
- Pour sauce over the chicken and vegetables. Stir to coat and cook for 1-2 minutes.
- Serve hot over rice or noodles.
