Ingrédients
  

For the Salad
  • 4 cups mixed greens
  • 1 cucumber sliced
  • 1 tomato chopped
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Wash and dry the mixed greens, cucumber, tomato, and red onion.
  2. Chop the cucumber and tomato into bite-sized pieces. Thinly slice the red onion.
  3. Combine all salad ingredients in a large mixing bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
  5. Pour the dressing over the salad and toss gently to coat.
  6. Serve immediately.
