Method
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Add chopped onion and minced garlic to the skillet. Cook until the onion is softened, about 3-5 minutes.
- Stir in broccoli florets, chicken broth, and soy sauce. Bring to a simmer.
- Pour in the cornstarch mixture and stir until the sauce thickens.
- Serve the chicken and broccoli mixture over cooked rice.
Notes
You can substitute chicken with tofu or shrimp. Feel free to add other vegetables like bell peppers or carrots.
