Method
- Make the fruit syrup: Combine fruit, water, and sugar in a small saucepan. Cook over medium heat, stirring occasionally, until the fruit has broken down and the sugar has dissolved, about 5-10 minutes. Mash the fruit with a spoon or potato masher.
- Strain the syrup: Pour the fruit mixture through a fine-mesh strainer into a bowl or pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids. Let the syrup cool.
- Assemble the soda: Fill glasses with ice. Add 1/4 cup of fruit syrup to each glass. Add lemon or lime juice, if using.
- Top with sparkling water or club soda. Stir gently and serve immediately.
Notes
You can adjust the amount of sugar in the syrup to your preference. For a thicker syrup, simmer for a few extra minutes. Store leftover syrup in an airtight container in the refrigerator for up to a week.
