Ingrédients
  

For the Fruit Syrup
  • 1 cup fresh or frozen fruit (e.g., berries, peaches, mango) chopped if fresh
  • 1/2 cup water
  • 1/4 cup sugar or to taste
For the Soda
  • 2 cups sparkling water or club soda chilled
  • 1/4 cup fruit syrup or to taste
  • 1 tbsp lemon or lime juice optional

Method
 

  1. Make the fruit syrup: Combine fruit, water, and sugar in a small saucepan. Cook over medium heat, stirring occasionally, until the fruit has broken down and the sugar has dissolved, about 5-10 minutes. Mash the fruit with a spoon or potato masher.
  2. Strain the syrup: Pour the fruit mixture through a fine-mesh strainer into a bowl or pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids. Let the syrup cool.
  3. Assemble the soda: Fill glasses with ice. Add 1/4 cup of fruit syrup to each glass. Add lemon or lime juice, if using.
  4. Top with sparkling water or club soda. Stir gently and serve immediately.

Notes

You can adjust the amount of sugar in the syrup to your preference. For a thicker syrup, simmer for a few extra minutes. Store leftover syrup in an airtight container in the refrigerator for up to a week.
