For the Potatoes
  • 1.5 lbs baby potatoes halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
For the Garlic Butter Glaze
  • 3 tbsp butter melted
  • 3 cloves garlic minced
  • 1 tbsp parsley chopped

Method
 

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the halved potatoes with olive oil, salt, and pepper. Spread them on the baking sheet in a single layer.
  3. Roast for 25-30 minutes, flipping halfway, until golden and crispy.
  4. In a small bowl, mix melted butter, minced garlic, and parsley. Drizzle over the roasted potatoes and toss to coat.
  5. Serve warm.
