- Heat olive oil in a large skillet over medium-high heat. Add chicken, oregano, salt, and pepper. Cook until browned, about 5 minutes.
- Add orzo to the skillet and stir to coat with the oil. Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 12 minutes, or until orzo is tender and liquid is absorbed.
- Stir in cherry tomatoes, feta cheese, and olives. Cook for 2 more minutes.
- Garnish with fresh parsley before serving.
