Ingrédients
  

For the Salad
  • 2 cans chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup kalamata olives pitted and halved
  • 1/2 cup feta cheese crumbled
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp dried oregano
  • 1 clove garlic minced
  • salt and pepper to taste

Method
 

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for up to 2 hours before serving for best flavor.
