For the Salad
  • 2 chicken breasts boneless, skinless
  • 1 avocado diced
  • 1 cup corn kernels fresh or canned
  • 2 cups mixed greens
  • 1/4 cup red onion thinly sliced
For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then grill for 5-6 minutes per side until fully cooked. Let rest for 5 minutes before slicing.
  3. In a large bowl, combine the mixed greens, avocado, corn, and red onion.
  4. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper to make the dressing.
  5. Add the sliced chicken to the salad and drizzle with the dressing. Toss gently to combine.
