For the Salad
  • 1 lb shrimp peeled and deveined
  • 6 cups mixed greens
  • 1 avocado sliced
  • 1/4 cup red onion thinly sliced
For the Citrus Dressing
  • 1/4 cup orange juice freshly squeezed
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the grill or grill pan to medium-high heat.
  2. Thread the shrimp onto skewers if using wooden ones. Grill for 2-3 minutes per side until pink and opaque.
  3. In a large bowl, combine the mixed greens, avocado, and red onion.
  4. In a small bowl, whisk together the orange juice, lemon juice, olive oil, honey, salt, and black pepper to make the dressing.
  5. Toss the salad with the dressing and top with grilled shrimp.
