Ingrédients
  

For the Stir-Fry
  • 1 lb boneless, skinless chicken breast cut into thin strips
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced
  • 1 cup carrots julienned
For the Sauce
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Equipment

  • Large skillet or wok
  • Cutting board
  • Chef's knife

Method
 

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken strips and cook until no longer pink, about 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add garlic and ginger. Sauté for 30 seconds until fragrant.
  4. Add broccoli, bell peppers, and carrots. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  5. Return the chicken to the skillet. Pour the sauce over the mixture and stir to coat evenly. Cook for 1-2 minutes until heated through.
  6. Serve hot over brown rice or quinoa.
