Ingrédients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
For the Vegetables
  • 2 bell peppers sliced (any color)
  • 1 onion sliced
For Serving
  • 2 cups cooked brown rice
  • 1 cup black beans rinsed and drained
  • 1 avocado sliced
  • 1/4 cup fresh cilantro chopped
  • 1 lime lime wedges

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken strips and fajita seasoning to the skillet. Cook for 5-6 minutes until chicken is no longer pink.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add bell peppers and onion. Cook for 5 minutes until softened.
  5. Return the chicken to the skillet and stir to combine with the vegetables. Cook for 1-2 minutes to heat through.
  6. Divide cooked brown rice among four bowls. Top with the chicken and vegetable mixture, black beans, avocado, and cilantro.
  7. Serve with lime wedges on the side.
