Ingrédients
  

Dry Ingredients
  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp salt
Wet Ingredients
  • 1 cup pumpkin puree
  • 0.5 cup maple syrup
  • 2 eggs
  • 0.25 cup coconut oil melted
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, maple syrup, eggs, coconut oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Transfer the batter to the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
