Instant Pot Chicken and Rice

Ingrédients
  

  • 1 lb boneless, skinless chicken thighs cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

  1. Set your Instant Pot to the Sauté function. Add olive oil. Once hot, add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add chopped onion to the Instant Pot and cook until softened, about 3-4 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the rinsed rice, chicken broth, paprika, salt, and pepper. Return the browned chicken to the pot.
  4. Secure the lid and set the valve to sealing. Cook on High Pressure for 10 minutes. Allow for a 10-minute natural pressure release, then carefully perform a quick release for any remaining pressure.
  5. Open the lid and stir the chicken and rice. Garnish with fresh parsley before serving.

Notes

You can substitute chicken breasts for thighs, but adjust cooking time as needed. Frozen chicken can also be used; add a few extra minutes to the cook time.
