For the Cake
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 0.5 cup buttermilk
  • 1 cup blueberries fresh or frozen
For the Glaze
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the lemon zest and juice.
  4. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour. Fold in the blueberries.
  5. Pour the batter into the prepared loaf pan and bake for 50 minutes, or until a toothpick inserted comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the glaze, whisk the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.

Notes
